The time taken to brew beer has been cut from six days to just one by
researchers at VTT, Finland’s national research lab. Ilkka Virkajärvi has
achieved this record-breaking brew by coating wood chips with concentrated yeast
and dropping them into the brewing vat where the yeast works efficiently,
converting sugar into alcohol. A pilot plant is already brewing up to 1200
litres a day.
